Herbs
Let’s use less salt and start using herbs as an alternative method of food flavouring.
Below are four of the most commonly used herbs used to flavour a variety of food, sauces and gravies.
Basil
- Great for container gardening or in garden beds
Thyme
- Grows well in an indoor garden and a sunny window.
Parsley
- Grows best outdoors. It is a slow-growing herb, therefore it is recommended to buy a young parsley plant late in summer and bring it indoors to mature.
Sage
- Grows well indoors and thrives in light
Basil Pesto
Ingredients
½ clove garlic
1 big bunch of fresh basil
1 handful of pine nuts / cashew nuts / almonds
1 handful of freshly grated Parmesan cheese
Extra virgin oil
Method
- Peel the garlic, pound in a pestle and add a pinch of salt.
- Roughly chop the basil leaves. Pulse in a food processor to a paste.
- Toast the nuts lightly and add to the basil mixture and pound again. Stir in half the Parmesan.
- Drizzle in some oil – you need enough to bind the sauce to get an oozy consistency.
- Add the remaining cheese and season with salt and black pepper.
- Add a squeeze of lemon if preferred.
